INGREDIENTS
- ½ cup oat flour
- ¼ cup buckwheat flour
- ½ tsp vanilla extract, optional
- 1 tsp baking powder, optional
- ½ tsp baking soda, optional
- 1 ripe banana
- Handful of spinach
- 1 ripe banana
- 1 tbsp Tahini paste
- ¼ cup water
- Coconut oil for greasing pan
DIRECTIONS
- Mix the dry ingredients in a bowl. In a blender, combine the banana, spinach, Tahini paste, water, and blend until smooth. Add to dry ingredients.
- In a non-stick pan, put a bit of coconut oil and put a tablespoonful of batter and cook the pancake for 2-3 minutes on each side.
- Serve with fresh fruit and maple syrup, if desired.
