1 ripe banana
2 egg whites
30g rolled oats (or until desired consistency is achieved)
(Optional) 1 small pot of low fat Greek yoghurt
(Optional) Vanilla extract
Coconut oil / butter

DIRECTIONS
- Put the banana into the microwave for about 30 secs or until you see it going soft.
- Mash the banana and add egg whites, rolled oats, yoghurt (optional) and vanilla extract (optional)
- Very lightly grease the pan. I actually rarely grease the pan as I have a good non-stick type.
- Make little pancakes about 2 inches in diameter. It takes a bit more time to brown on each side than normal pancakes so be patient. :)
- Serve with fresh fruits, nuts, seeds, and a bit of maple syrup if desired.
